Double-Layer Peppermint Fudge shared by mandiehman

Ingredients
- 1 12-ounce bag semisweet chocolate chips
- 1 12-ounce bag white chocolate baking chips
- 2 15-ounce cans sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1/2 cup crushed peppermint candy

Line a 9" square pan with foil or parchment paper.
In a double boiler, combine chocolate chips and one can of sweetened condensed milk. Heat until melted and smooth, stirring constantly. Remove from heat and stir in vanilla extract.
Spread chocolate fudge mixture in pan.
In a double boiler, combine white chocolate chips and one can of sweetened condensed milk. Heat until melted and smooth, stirring constantly. Remove from heat and stir in peppermint extract.
Spread carefully over chocolate layer. Sprinkle with peppermint candy, pressing lightly to attach the candy to the fudge.
Refrigerate until set, about 1 hour.
Remove pan from refrigerator and life the foil out of the pan. Carefully peel off the foil and slice the fudge into 1"x1" pieces. Serve chilled.
TIP: If you don't have a double boiler, fill a saucepan with water and set a glass bowl on top of it. It works just as well!
